Roadside tomatoes 8/31/17

Yesterday we passed our favorite mini-farm stand in this spot on Centerville Road north of Intercourse PA where you can buy all 12 of these tomatoes for $1.00!

Joe DieselWe meet a lot of interesting people in the course of our chaplaincy work. Yesterday I visited for a few minutes with Joe, AKA J Diesel, who is a professional wrestler, which he calls "theatrical entertainment". That is a form of entertainment I really have no interest in along with boxing and similar sports. However I have grown to appreciate the strength and skill involved. Last fall he lifted me up in a wrestling move but thankfully refrained from "body slamming" me when he put me back down! (Photo)

I was interested in Joe's perspective on the highly publicized fight this last weekend between Floyd Mayweather and Conor McGregor since I really didn't understand why it was such a big deal. He told me how he had met the fight's winner, Floyd Mayweather, who won the fight and will now "retire"* at 50 wins and no losses, a record surpassing Rocky Marciano, who had 49 wins and no losses. However as Joe explained it's not an undisputed record and many do not consider the two records analogous.

This brought to mind an old Gospel song titled "Champion of Love" which draws an illustration from a boxing match and proclaims Jesus Christ as "The all-time, undisputed, undefeated Champion of Love."

Ladies and Gentlemen, may I have your attention?
I want to
introduce to you
In this corner of the good and the right,
Stands a champion
robed in white
His height exceeds the heavens, His weight outweighs the world
His reach reaches everywhere, His age is evermore

Revelation is a hard book. Its imagery is hard to understand.  But it can be summed up by these victorious words, "The Good Side Wins".

In Revelation 17:14 we read of the culmination of the ancient battle, "They will wage war against the Lamb, but the Lamb will triumph over them because He is Lord of lords and King of kings—and with Him will be His called, chosen and faithful followers".

From this text let us highlight the words,
"the Lamb will triumph". Sometimes on this side of eternity we wonder with all the tragedy and heartache. Of course foremost for us in the USA has been the aftermath of the hurricane in Texas but all over the world we see evidence of the fall. But let us rest with the assurance "the Lamb will triumph".

Paul states in 1 Corinthians 15:57, "But thanks be to God, who gives us the victory through our Lord Jesus Christ."

Today be assured of this absolute victory of Jesus Christ who is indeed
"The all-time, undisputed, undefeated Champion of Love.

Tomato Pie 8/30/17

We are having an abundance of tomatoes from our small raised garden and have been enjoying a tomato dish that Brooksyne is preparing even as I type. We first had it as the signature dish at the appropriately named Tomato Pie Cafe in Lititz PA
. Initially "tomato pie" did not sound very appetizing since we associate pies with dessert and sweets. However this pie is great! Today Brooksyne will share her own original recipe and if you, like us, have an abundance of tomatoes you may want to try it out!

Brooksyne’s Tomato Bacon Pie
9” or  10” Pie Crust
Approx. 6 Tomatoes (Sliced)
½ Medium Onion (Thinly sliced)
¾ C. Mayonnaise
¾ C. Greek Yogurt
¾ C. Shredded  Cheddar Cheese
¼ C. Parmesan Cheese (optional)
¾ C.  Bacon Crumbs
1 Sleeve Ritz or Town House Crackers, crushed
¼ C. Butter, melted

•    Prepare Crust. (I pre-bake mine.)
•    Slice tomatoes ahead and lay out, both sides, on paper towels to drain juice.
•   Mix Mayo, Greek Yogurt & Shredded Cheese & set aside. (I use Greek yogurt in place of additional mayonnaise since it tastes great in recipe, saves calories, and adds protein.
•    Layer half of tomatoes over bottom of pie crust.
•    Spread half of sliced onions and bacon crumbs over tomatoes.
•    Carefully spread half of mayonnaise mixture with spatula over tomatoes.
•    Repeat steps above for tomatoes, onions, bacon crumbs and mayo mixture.
•    Sprinkle crushed crackers over top of tomato pie, drizzle butter over crackers.
•    Bake at 350 degrees approximately 30 minutes or until crackers are lightly browned.
•    Let pie sit for about ten minutes so it sets up when cutting.
(So far I have not had a soggy tomato pie, so be sure to drain tomatoes as directed above.)
Note: Since we had fresh corn I wish I’d have included corn in the recipe since it’s delicious together.
